Bourbon Balls

 

2 cups vanilla wafer crumbs

2 teaspoons cocoa

1-1/2 cups confectioner’s sugar

1 cup pecans, finely chopped

2 teaspoons white corn syrup

¼ cup bourbon (or more to taste)

 

Mix vanilla wafer crumbs, cocoa, 1 cup confectioner’s sugar and pecans

 

Add corn syrup and bourbon and mix well

 

Shape into 1” balls and roll in remaining confectioner’s sugar

 

Cover in a tight container for 12 hours

 

These will keep in a cool place for 4 weeks. Can also be frozen
