Sweet Potato Casserole
3 cups mashed, cooked sweet potatoes
1 cup sugar
½ cup melted butter
1/3 cup milk
1 teaspoon vanilla
½ cup brown sugar
¼ cup flour
2-1/2 tablespoons melted margarine
½ cup chopped pecans
· Combine sweet potatoes, white sugar, melted butter, egg, milk and vanilla; mix well.
· Pour into 2 quart casserole disk. Cover with topping (see below)
· Combine brown sugar, flour, 2-1/2 tablespoons melted butter and pecans; mix well. Sprinkle on top of potato mixture.
· Bake at 350ºfor 30 minutes.
